Weekly Menu Plan #51

Grain-Free Philly Cheesesteak Sandwiches
Thirty-three.  My soon-to-be age, come Saturday.  A lot of introspection happens every birthday.  I struggle through feelings of inadequacy, not hitting every mark I've set for myself.  Then I shake it off and celebrate all the blessings throughout the past three-and-almost-a-half decades.  Yep, a wild and crazy birthday partier am I.  The children asked what I wanted for my birthday.  I told them I still want to cook (I love it!) but I want daddy and them to do all the clean-up (I hate that part).  Win!

Monday:
To do: thaw chicken stock for Wednesday
Lunch:  Sourdough Nut Butter & Raw Honey Sandwiches, Apple & Raw Cheese Slices
Dinner:  Veggie Laksa with rice noodles, Salad


Tuesday:
To do: Make Muhammara, thaw chuck roast for Thursday
Breakfast:  GF Persimmon Muffins (recipe coming soon)
Lunch:  Cheese & Turkey Wraps, Crispy Almonds, Hard Boiled Eggs

Wednesday:
To do: soak porridge
 roast acorn squash & puree it, thaw chicken stock

Breakfast:  German Chocolate Power Bars (double batch)
Lunch: Persimmon Muffins from Tuesday, 
Muhammara, Carrot Sticks, Raw Cheese

Dinner: Pumpkin Soup (using acorn squash puree), Green Beans with Mushrooms

Thursday:
To do: make cookie dough bites, thaw tomato bisque for Saturday
Breakfast: Soaked Porridge with Persimmon Puree Stirred In
Lunch: Leftover Breakfast from Wednesday, Pear Slices, Hard Boiled Eggs, Raw Cheese


Friday:
To do:
Breakfast:  Breakfast Burritos
Lunch:  Cookie Dough Bites, Raw Cheese & Apple Slices, Leftover Persimmon Muffins

Saturday: my birthday!
To do:
Lunch:  Sourdough Grilled Cheese & Creamy Tomato Bisque
Snack: Sliced Bell Peppers to dip into Olive Fig Tapenade over Feta
Dinner: Out with my man!  Kids will have Trader Joe's GF Mac n Cheese

Sunday:
To do:
Breakfast:  GF Pumpkin Spice Muffins (double batch)
Lunch: Leftovers
Dinner:  Leftovers
(Sunday is my day off)
